Ingredients:

  • 250g butter
  • ½ cup cocoa powder
  • 1½ cups white sugar
  • 4 eggs
  • 1 cup plain flour
  • 1 tsp baking powder
  • 1 tsp vanilla essence

Instructions:

  • Melt butter in a saucepan large enough to mix all the ingredients. Mix in cocoa.
  • Remove from heat and stir in sugar. Add eggs and beat well using a wooden spoon.
  • Sift flour and baking powder into the mixture. Add vanilla essence and mix to combine.
  • Pour into a greased 20 x 30cm sponge roll tin. Bake at 180°C (or 160° fan forced) for 25 to 30 minutes or until brownie springs back when lightly touched.
  • Cut into bars while still warm. Once cold, ice with chocolate icing or sprinkle with icing sugar if desired.
